The Big Bang - An ethical restaurant

The aim was to develop a business where food miles were at a minimum, where each time a customer dined, they were supporting local suppliers and starting to break down the carbon footprint of the British restaurant world.

It was an ethical movement which removes the economy of scale from the business model as we were buying small, fresh quantities from local suppliers on a daily basis at fair prices rather in bulk from centralized warehouses; it is also a dish that will never command the highest of prices on the menu even if it did have the tag of Best Bangers and Mash in Britain!

The hope was that in years to come, as petrol prices rose, chain restaurants would be forced to change their procurement chains and would have to source locally to be able to put the same dishes on the table for a comparable price. So, although it was an ethical start, I reasoned that in years to come it would prove economically sensible too and should lead the way for other restaurants to follow in the future if it worked.     read more...
